Jackfruit Curry (Gaeng Kanun)
This is a traditional Karen Hill tribe recipe using local game, however I use Cornish Game Hens or pork. It is eaten fiendishly hot by the Karens but I have toned it down for Western palates.

Isan Style Sausages
I learned to make these Isan sausages called Sai Grog Tod from the Colonel I. F. K. Philpott and his lovely wife Muoi Khuntilanont in Korat (Ubon Ratchashima)in the mid 1990's. They have been a family favourite ever since.

Isan Style Massaman Curry Paste
Massaman Curry is a southern Thai dish and is most often made using beef, but it is also perfect with tofu, duck, chicken, lamb, etc. You will be amazed at how flavourful and easy this curry paste is to make. Make this curry paste ahead of time for quick easy meals any time.

Isan Pork Salad
Yum Mu Isan is a spicy pork salad that is the perfect beginning to a traditional Thai meal. Isan salads are often the hottest part of a Thai meal, but youcan use fewer chiles to adjust to your palate.

Introduction to Thai Cooking

Hunglay (Curry of North Thailand)
A fragrant and flavourful curry of Northwest Thailand influenced by Burmese and Indian spices.

Hot-Sweet Spicy Dipping Sauce (Nam Jeem Kai Yang)
This hot, sweet and spicy dipping sauce is excellent with barbecued chicken and deep fried snacks such as egg rolls or fried calamari.

Hot and Sour Vegetables (Phrik Som Phat Phak)
This an easy and very flavourful Thai vegetable side dish which is perfect with any Thai meal, or as a meal-in-a-bowl quick lunch.

Tom Yum Goong (Hot and Sour Shrimp) soup is the most popular of all the wonderful Thai Soups. You can make this easy and flavourful soup at home in 30 minutes.
