This is my absolutely favourite recipe for Thai Coconut Ice Cream. I learned this amazing recipe from the late Colonel Ian F. Khuntilanont-Philpott in the mid 90’s in his home in Korat, which lies in the plains area. I especially love the candied ginger topping.

Egg rich coconut milk custard steamed in hollowed out small pumpkin such as kabocha is absolutely the best.
