
Cucumbers and Cheese Slices are great for a midday snack, for an appetizer at a dinner party, and can easily be brought to work as well. They appeal to all palates!
Ingredients:
1 large cucumber
4oz cheddar cheese
Do not peel the cucumber, but give it a thorough washing. Slice the cucumber lengthwise into 1/4 inch (1/2 cm) slices.
Cut the cheese slices to fit on top. Voila! Quick and easy.
Serves 2 people.

This is a very easy recipe to scale up. Simply get more cucumbers and get more cheese. You can whip out enough cucumbers and cheese for a house party in under ten minutes. They're good for all ages and healthy as well.
To liven up the cucumbers, try taking a peeler and peeling vertical stripes down the cucumber before you slice it up. This will give an interesting striped pattern to the edges of the cucumber.
On the cheese side, you can go with a variety of cheese types - Monterey jack, gouda, brie, edam, you name it. Mix and match your cheese creations.
You can cut the cheese into non-square shapes - try triangles, octagons, even circles.
Cheese is full of calcium, so be sure to keep your bones strong and sturdy!
