
Ingredients:
1/4lb ground beef
3 Tbsp chili oil
1 tsp canola oil
1 low carb tortilla
2 Tbsp salsa
1 Tbsp chili powder
1/4c Mexican cheese mix
1/4c spinach
2 Tbsp sour cream
Brown the hamburger in the chili oil, and add a squirt of canola oil at the end to give it extra juciness. Lay it out on the tortilla and add half of the salsa. Sprinkle on the chili powder. Fold the tortilla, spike it shut with a toothpick and sprinkle on the shredded cheese blend. Microwave around 2 minutes or until fully melted.
Add on the rest of the salsa and if you want some diced tomatoes. Add spinach and sour cream as desired. It is REALLY tasty! I really recommend the baby spinach - it adds a great fresh crunch, and it's a very potent antioxidant.
The carbs on this can vary depending on the carbs in the ingredients you use. For example, the Atkins tortilla is only 3g but you can of course have FAR more carb counts if you go with a standard tortilla. The salsa should be 2g but again could be much more if you're not careful. Check those labels!
