April fool!! Scouts have great breakfasts, but they probably aren’t all heart healthy. The following recipe is one of my favorites. It’s great on a campout or if you’re having a group over for breakfast. And if you don’t have a Dutch oven, you can try cooking it in a regular oven.
EGG BAKE
12 Slices Canadian Bacon (ham can also be used)
12 Slices Swiss Cheese
12 Eggs
1/2 Pt. Cream
Grated Parmesan Cheese
Pre-warm the Dutch oven. The bottom can be lined with foil or you can cook directly in the oven. Cover the bottom of a 12” oven with the Canadian bacon. Cover the Canadian bacon with the Swiss Cheese. Add the eggs on top of the cheese, being careful not to break the yolks. Spread the eggs evenly around the oven. Add the cream over the eggs so that just the yolks are exposed. Make sure the cream is distributed evenly. Sprinkle the grated Parmesan on top. Cover and bake for about 30 minutes in a 350 degree oven. Check occasionally to see how your oven is cooking. Your heart specialist may not want you eating this every campout, but there won’t be leftovers at the end of the meal.
