Apricot Honey Glazed Carrots

These Apricot Honey Glazed Carrots are sure to be a hit with your family. They make a good counter to any hot and spicy food you may serve. They are also wonderful by themselves. Try serving these carrots to family members who usually push them aside or hide them under bread.

1 cup Apricot KERNS from LIBBY'S Refrigerated All Nectar

1 tablespoon honey

1 tablespoon butter or margarine

1/4 teaspoon salt

1 1/2 teaspoons cornstarch

1 pound baby carrots

__________________

1. Combine nectar and cornstarch in small bowl; mix until smooth.

2. Cook carrots in boiling water for 10 minutes or until crisp-tender; drain.

3. Return to pan and add honey, butter and salt. Add nectar mixture and cook over low heat for 5 minutes or until apricot glaze is thickened.

Serves 4
