In this week's column:

We have two recipes featuring popular Chipotles chilies peppers, pronounced [chee-POT-tleh]. These are actually smoked jalapeno chili peppers. Once smoked they change color and become a dullish coffee color.

I think everyone who is a Martha Stewart fan was watching 'From Martha's Kitchen the day Rick Bayless was her guest. Here is the recipe to his much talked about broiled chipotle chicken with creamy spinach.


Crab Cakes with Chipotle Sauce are easy to make and delicious. Serve as appetizers or entre.


Hot and Spicy String Beans terrific with meatloaf and buttery mashed potatoes. Vinegar is the 'secret' ingredient here. The use of vinegar is not so unusual, southerner's often add a dash of vinegar to their cooked greens.


Cajun Oven-Fried Oysters Enjoy a taste of Louisiana. These Cajun style fried oysters served with a spicy red cocktail sauce are good for a crowd or an elegant party. Or serve when it's time to hold the club meeting at your house.


Meatloaf With Roasted Tomato Sauce Made extra moist, juicy and flavorful with the addition bacon slices.

They say it takes a minute to find a special person, an hour to appreciate them, a day to love them, but then an entire life to forget them.

I wish you a day of peace, happiness and joy.
