Candied Pecans
Makes about 2 cups
1 egg white
1/2 cup sugar
3/4 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 cups pecan halves
Butter for greasing baking sheet
Grease large baking sheet with butter; set aside. Whisk egg white in a bowl until foamy. Add remaining ingredients, except for pecans, and whisk until thick and opaque. Add the pecans and stir until well coated. Using a slotted spoon or forks, transfer the nuts to the prepared baking sheet; spacing apart. Discard any remaining coating.
Bake nuts in a preheated 300° oven until deep golden brown in color. About 30 –35 minutes. Let cool completely before storing in air tight containers or zip-loc baggies.
Easy Candied Walnuts
Makes about 1 cup
1-1/4 cups sugar
1 cup walnut halves
Cook the sugar in a large, heavy skillet over medium heat, stirring constantly with a wooden spoon, for about 7 – 10 minutes or until melted and golden.
Remove from heat. Drop walnut halves, a few at a time, into caramelized sugar, turning to coat. Use a fork or tongs to remove the coated nuts to wax paper to cool. Repeat with remaining walnuts. Let cool before storing in air tight containers or zip-loc baggies.
