This turkey, apple, sweet bell peppers, onion mix is the perfect filling for warm pita bread that has been toasted with savory hot sauced butter. The use of three different colored peppers not only make these sandwiches lovely to look at, each pepper brings its own subtle flavor to the mix.
1 medium golden delicious apple, cored and thinly sliced
2 tbsp fresh lemon juice
1 cup thinly sliced onion
1 smaill red bell pepper, cut into thin strips
1 small green bell pepper, cut into thin strips
1 small yellow bell pepper, cut into thin strips,
1 tbsp olive oil
8 ounces cooked turkey breast, cut into thin strips (or chicken breast)
6 whole-wheat pita bread rounds, lightly toasted and buttered*
½ cup plain low-fat yogurt
1 garlic clove minced
Toss apple with lemon juice; set aside. In a large nonstick skillet, cook onion and peppers in hot oil stirring frequently until crisp-tender. Stir in turkey; cook and stir until heated through. Stir in apple mixture. Add garlic to yogurt and mix. Place turkey onto pitas and fold in half. Top with yogurt.

*Use 2 pats unsalted softened butter mixed with 5 or 6 dashes of hot sauce (do not usea a Tabasco type sauce for this). Brush mixture on pita rounds.
