American Chop Suey is one of those comfort foods that is simple to make and delicious. This low carb version adds in a healthy dose of flavor.
3/4 cup low carb elbow macaroni
1 1/2 lb ground beef
2 cloves garlic, chopped
1/2 tsp onion flakes
4oz tomato sauce
1/2 cup green pepper, diced
1 cup plum tomatoes, diced
1/2 cup mushrooms, chopped
1/2 tsp oregano
1/2 tsp basil
salt & pepper
Cook macaroni as per the directions, set aside. Brown the ground beef. Then add the garlic, onion, tomato sauce, green pepper, plum tomatoes and mushrooms. Stir in oregano and basil. Add salt and pepper to taste. Simmer 45 minutes. At very end, stir in macaroni. Add parmesan or mozarella on top as desired.
Carbs per serving: 6.5g
Note that I'm not a big green pepper fan, so I made the one in the photo with zucchini instead. It's just as tasty!
