Pepper Vinegar

I was given about twenty-five early 1900's Creole recipes many years ago. This pepper vinegar recipe was among them. Every year I make a small batch to give away.

To make pepper vinegar:

1 pint of small cherry peppers or chili* peppers
1 pint of good white vinegar
2 fancy pint bottles with tight a cap or top.
2 gift cards with ribbon.

1. Sterilize bottles and tops.

2. Fill each bottle to the one-half mark with cherry or chili peppers.

3. Add vinegar to bottles (leaving about 1/2 inch from full)

4. Wipe neck and rim of bottle. Cap tightly and leave for at least one week before you use or give away.

This recipe makes 2 pints.


If this is a holiday gift attach a gift card with ribbon. I always write or type the following which is in part from the recipe:

Vinaigre Pimente

(Pepper Vinegar)

Add a few drops to soups, salads or any cooked greens.
When bottle is half empty refill with white vinegar and shake.


I was told that Vinaigre Pimente is Creole French for pepper vinegar.

*buy red chili's and green chili's. Mix the colors - very pretty for Christmas.

Keep in mind that using cherry peppers calls for a wide-mouthed bottle or jar. You do not want to bruise or break the peppers.
