China Boy Chow Mein Noodles, Wide, 6-Ounce Bags (Pack of 12)

2 boneless skinless chicken breasts
2 pieces of fresh ginger
1/2 head of iceberg lettuce
5 fresh radishes
1/2 cucumber
1 green onion
½ cup wide fried chow mein noodles
Marinade:
1 tbsp Hoisin sauce
1 tsp soy sauce
1 tbsp sesame oil
1 tsp sugar
1 tbsp sherry
Dressing:
1 tbsp Hoisin sauce
1 tbsp sesame oil
1½ tbsp sugar
1 tbsp rice wine vinegar
1 tbsp soy sauce
1 tbsp hot water
- Peel the ginger and cut it into small chunks.
- Remove all of the fat from the chicken and place the breasts in a pot. Submerge them in hot water and add the ginger. Bring the pot to a boil and then cover it and turn it down to low. Simmer the chicken for about an hour.
- After an hour, remove the chicken from the pot and shred it by pulling it in pieces with your hands. Place the shreds in a large bowl with a tight fitting lid.
- In a large cup, thoroughly mix together the ingredients for the marinade. Pour this mixture into the shredded chicken, coating it through. Cover it and place it in the refrigerator for 2 hours.
- After 2 hours, prepare the salad. Shred the lettuce and place it in a large salad bowl.
- Scrub the radishes under cold running water. Cut off the ends and then slice them into thin slices and place them in the salad bowl.
- Rinse the cucumber under cold water and dry with paper towels. Chop it into small ¼ inch pieces and add them to the salad.
- Rinse the green onion under cold water. Cut off the base and about ½ inch from the top of the greens and discard. Cut the remaining stalk into small pieces and place them in the salad bowl.
- Toss everything in the salad bowl together thoroughly.
- In a large cup, mix together all of the ingredients for the dressing.
- To serve, place the salad on a plate. Place the shredded chicken on top of the salad. Top with the chow mein noodles and dressing. Makes 2 generous servings.
