Chinese Shredded Chicken Salad Recipe

This Chinese chicken salad makes a wonderful light and fresh meal for lunch. The gingered chicken with the Hoisin dressing makes an amazing flavorful combination that just bursts in your mouth! The extra crunch provided by the wide chow mein noodles is amazing. These noodles can usually be found in the ethnic secion of your local grocery store. 2 boneless skinless chicken breasts
2 pieces of fresh ginger
1/2 head of iceberg lettuce
5 fresh radishes
1/2 cucumber
1 green onion
cup wide fried chow mein noodles

1 tbsp Hoisin sauce
1 tsp soy sauce
1 tbsp sesame oil
1 tsp sugar
1 tbsp sherry

1 tbsp Hoisin sauce
1 tbsp sesame oil
1 tbsp sugar
1 tbsp rice wine vinegar
1 tbsp soy sauce
1 tbsp hot water

  1. Peel the ginger and cut it into small chunks.

  2. Remove all of the fat from the chicken and place the breasts in a pot. Submerge them in hot water and add the ginger. Bring the pot to a boil and then cover it and turn it down to low. Simmer the chicken for about an hour.

  3. After an hour, remove the chicken from the pot and shred it by pulling it in pieces with your hands. Place the shreds in a large bowl with a tight fitting lid.

  4. In a large cup, thoroughly mix together the ingredients for the marinade. Pour this mixture into the shredded chicken, coating it through. Cover it and place it in the refrigerator for 2 hours.

  5. After 2 hours, prepare the salad. Shred the lettuce and place it in a large salad bowl.

  6. Scrub the radishes under cold running water. Cut off the ends and then slice them into thin slices and place them in the salad bowl.

  7. Rinse the cucumber under cold water and dry with paper towels. Chop it into small inch pieces and add them to the salad.

  8. Rinse the green onion under cold water. Cut off the base and about inch from the top of the greens and discard. Cut the remaining stalk into small pieces and place them in the salad bowl.

  9. Toss everything in the salad bowl together thoroughly.

  10. In a large cup, mix together all of the ingredients for the dressing.

  11. To serve, place the salad on a plate. Place the shredded chicken on top of the salad. Top with the chow mein noodles and dressing. Makes 2 generous servings.
