Marshmallow Frosting Recipe

Marshmallow Frosting


This recipe makes a light and fluffy frosting with a whipped marshmallow-like texture.... enough to generously frost a two layer cake.

  • 4 egg whites
  • 1/2 tsp. salt
  • 1/2 cup sugar
  • 1-1/2 cups light karo syrup
  • 2 tsp. vanilla

Preparation -
Place the egg whites in a deep narrow mixing bowl. Stir the salt into the egg whites. Beat with an electric mixer at high speed until the mixture forms soft peaks. Gradually fold in the sugar, about 2 tablespoons at a time. Beat until smooth and glossy. Add the Karo syrup gradually, and beat until the mixture forms stiff peaks. Fold in the vanilla. This recipe makes enough to generously frost a 2 layer - 9" cake, several dozen cupcakes or a large sheet cake.
