1 16oz bag frozen cauliflower
1 cup shredded cheddar cheese
1/2 cup mayonnaise
1/4 cup Dijon mustard
1/8 tsp thyme
Start by following the instructions on the frozen cauliflower bag nearly to the end. In my case, it said to cook it for 2 minutes, stir it up, and cook it for another 5 minutes. Since you don't want to overcook cauliflower, end about a minute short of the stated cook time. So in my case, I only cooked it for 4 minutes for that second part.
Now you're going to stir in the remaining ingredients. If your cauliflower was in a self-steaming bag, move it into a microwave-safe casserole dish. If you were already using a dish, you're all set. Add in the cheese, mayonnaise, mustard, and thyme. Mix it up well so everything is coated.
Cover it and put it back into the microwave for another two minutes. This should finalize the cooking on the cauliflower plus melt the cheese.
I sprinkle some salad herbs over the top at this point, to make them pretty and to add a bit of flavor, but you don't need to. The dish is quite tasty as it is!
This makes four servings.

I like that it's quick to make, warm and filling, and you can have leftovers that are just as tasty when you heat them up.
If you need to cut the calories even further for some reason, you can go with a light version of mayonnaise. You'll get the same amount of carbs in the dish, but you'll reduce the calorie count substantially.
