April 2012 means we are on the verge of another golf season, The Masters is over and with Bubba Watson making a fantastic golf shot to win. Winning with a pink driver this makes the 2012 Masters one to remember. I always believe after the Master the golf season is in full swing. It means you will be checking over your golf equipment and that means golfing clothes and shoes. It may mean getting some clubs re-gripped or ordering a fill in club you have been looking for. I have taken care of this by having my Hybrid #7 re-gripped and ordered a Big Bertha Hybrid #6 to fill in my set. I should be able to be ready to play good golf but other part of my life has been taken over by a remodeling job of my kitchen.
I spend a lot of time in my kitchen as I love to bake and try out new recipes that I share with as many places that are willing to eat what I fix. It means I am also on the lookout for food items that can be taken to the golf course to help keep up your energy. I also provide treats to the Pro Shop to help them make it through their busy day. Many times they get so busy it is hard to find the time to eat, so these treats are available.
When baking cookies I try to make them healthy or as much as possible. When you have to use butter or butter flavor shortening with white and brown sugar it becomes a challenge. But if you are careful and not try to eat a full batch a few cookies can bring you quick energy to finish that round of golf. I will share with you this healthy cookie recipe I have used.
Healthy Chocolate Chip Oatmeal Cookie
1/2 cup packed brown sugar
½ cup granulated sugar
½ cup–Crisco butter flavor shortening
1 large egg
1 large egg white
2 tsp. vanilla extract
1 1/4 cups all purpose flour
1 tsp. baking soda
1/2 tsp salt
2 ½ cups old-fashioned oats
1 cup chopped up bittersweet chocolate
Preheat oven at 350 degrees. Prepare two cookie sheets with parchment paper.
Mix flour, soda and salt stir to blend in a small bowl and set aside.
In large bowl of mixer on medium to low speed, beat sugars and Crisco butter flavor shortening until well blended. Scrape down the bowl with rubber spatula. Add egg and egg white one at a time then vanilla and beat until smooth. Add flour mixture gradually and mix well. Add chopped bittersweet chocolate pieces until well combined.
