Red, White, & Blueberry Spinach Salad Recipe

If you’re looking for a great salad to carry on the patriotic theme of Red, White, and Blue, either for Independence day in the US or holidays throughout the world where the colors of their flag are red, white, and blue, why not try this beautiful Red, White, and Blueberry Spinach Salad. The spinach, of course, is green, but the initial presentation can be very patriotic by piling the berries on top of the spinach mixture and drizzling the white yogurt-based dressing over the berries. Just as guests are ready to eat, the salad can be tossed.

This delicious salad is light, low calorie, colorful, and very nutritious. It’s also quick and easy to put together and takes advantage of the fabulous fresh berries that are available during the summer. Even if it’s not important to emphasize the patriotic theme, this is a great salad to serve along with grilled meats or poultry, and is pretty enough to entice guests at a backyard barbecue or get-together. Add grilled chicken for a main dish salad along with crusty, freshly baked bread.

Dressing:
1/2 cup Greek-style yogurt
1 tablespoon freshly squeezed lime juice
zest of 1 lime
5 tablespoons sugar
3 tablespoons white wine vinegar

16 cups fresh spinach
1/4 cup crisp crumbled bacon
1/4 cup toasted sliced almonds
1/4 cup thinly sliced red onions
1 cup crumbled blue cheese


2 cups fresh raspberries, or sliced strawberries
2 cups fresh blueberries

  1. Mix the dressing ingredients well; set aside.
  2. Toss the spinach with the crumbled bacon, almonds, red onions, and blue cheese in a serving bowl.
  3. Sprinkle the berries over the top and drizzle with the dressing.
  4. Toss just before serving.
