Bok Choy Noodle Bowl Recipe

1 head bok choy
1 tbsp Szechuan peppercorns
2 cloves garlic
½ tbsp of Himalayan pink salt
5 cups vegetable stock
6 oz Shandong noodles
1 tbsp soy sauce

Today I decided to make an easy bok choy noodle bowl recipe for lunch. This simple recipe consists of bok choy leaves and wide Shandong noodles in a deliciously flavorful broth.

  1. Start by cutting off the bottom of the bok choy and then rinse the stalks and leaves under cold running water until all of the dirt is removed. Then just cut the leaves from the stalks. We are only going to use the leaves for this recipe. Save the stalks in the refrigerator for a future recipe.

  2. Grind the Szechuan peppercorns using a mortar and pestle and set them aside.

  3. Smash the garlic firmly with the side of a knife and then peel and dice it into tiny pieces.

  4. Place the pink sea salt in a grinder. If you don’t have pink Himalayan salt you can simply use regular salt instead.

  5. Now heat the broth in a medium sized pot that has a lid on high and let it come to a boil.

  6. When the broth boils add in the garlic, Szechuan peppercorns, soy sauce and salt, and give this a quick stir.

  7. Then add in the noodles without breaking them. Let them soften and gently push them down with a spoon and stir them in as they become soft.

  8. Once the noodles are mixed in, add the bok choy and put the lid on the pot. Bring it to a boil and then turn the heat to low and let it simmer for a minute or two or until the bok choy sinks down into the broth.

  9. Then carefully lift the lid, give it a nice stir and let it continue to cook until the noodles are al dente. For these noodles it takes about 3 to 5 more minutes before they are al dente. You can use any type of noodle that you love for this recipe, though the cooking time here will differ depending on the kind of noodles you use.

  10. Once they are al dente taste the soup to see if it needs more salt and then add it according to your tastes.

  11. Once the salt is adjusted to your tastes you can remove it from the heat and serve immediately. This makes about 4 bok choy noodle bowls.
