Energy from a Cookie

For the past year I have been in a constant cookie baking spree. I am always looking for something new and different that will also be good for you. Of course cookies to be good have to have butter and sugar so I look for ways to make them nutritious too. Of course the peanut butter ones get rave reviews and I love peanut butter so keep a steady supply coming through Amazon.com. There is so much you can do with peanut butter and this recipe can be an energy builder to take along on the golf course. Give this a try it is very simple and keeps well in a jar in your panty or counter tops for easy reach.

Peanut Butter Crunch Bars

2 Tablespoons of Butter
1 cup crunch peanut butter
1 cup smooth peanut butter
4 cups or 1 full bag of miniature marshmallows
2 cups crushed butter-flavor crackers (l ½ stacks crackers)
2 cups dark chocolate crushed

Use a 9x12 cake pan and line with foil that overlaps pan, spray with butter spray.

In larger pan over low to medium low heat melt butter and peanut butter stir constantly until smooth to keep from scorching. Add marshmallows a small amount at a time and stir well until all are melted and blended. Remove from heat and stir in crushed butter crackers.

Place in prepared pan and smooth mixture and pat down. Place chocolate over warm peanut butter mixture and spread evenly over peanut butter when they have melted. Place in refrigerator to firm up. When cooled and set remove foil from pan and cut into small squares. These will keep in an air tight container in cool place.

Suggestions: If you use the two full cups of Crunchy peanut butter use just one sleeve of crackers. If you use all creamy peanut butter you can add a ½ cup chopped peanuts or pecans with a sleeve and half of butter crackers.

I also have rolled this mixture while still warm into balls and then refrigerated them to cool. I then dipped them into melted bitter sweet chocolate for a peanut butter truffle.

I have taken these Peanut butter bars and truffles with me on the golf course. This will give you some extra energy during those last nine holes. Since this is summer and always hot in Texas I place them in my cooler that is attached to my golf cart. I place freezer bags in the cooler to keep these from melting. It also works well to keep my fruit cool that I always bring along while golfing.

Another tip always drink lots of water, I have a tall insulated thermos that goes with me on my golf round. It keeps my ice water good and cold and it is very refreshing so drink plenty of water. During these hot dog days of summer it is advisable to make your tee times early in the mornings to eliminate the hottest times of the day. One can always get in your rounds of golf when you keep up your energy so try these Peanut Butter Crunch Bars.
