Take these bars to the next backyard barbecue or picnic; everyone will be shocked when you tell them (after the bars have been eaten, of course) that they contain zucchini. These will remind you of the ever-popular lemon bars, but with the trendy flavor of lime. Yum!

Crust
1/2 cup butter
1/4 cup powdered sugar
1 cup flour
1/4 teaspoon salt
Filling
3 eggs
1 cup sugar
2 tablespoons flour
3 tablespoons freshly squeezed lime juice
1 teaspoon lime zest
1 cup finely grated zucchini
powdered sugar, for dusting
- Preheat oven to 325°.
- Spray an 8 x 8" glass dish with non-stick spray.
- Crust: Cream butter and powdered sugar; add flour (or place ingredients in food process and process until the butter is incorporated) and press into the prepared pan.
- Bake 15 minutes.
- Reset the oven to 350°.
- Meanwhile make the filling: Whisk the eggs until frothy; whisk in the sugar, flour, lime juice, lime zest, and zucchini.
- Pour over the hot crust and return to the oven for 20-25 minutes or until set.
- Dust with powdered sugar.
- Cool and cut into bars.
