Pumpkin Bread & Tea
Fall is here! What a better way to chase off the chill of an autumn afternoon than to have a helping of fresh baked pumpkin bread and a cup of tea?
Here is a quick and easy pumpkin bread recipe that will have your house filled with the scents of fall and warmth in your heart.
My mom’s time-worn pumpkin bread~
Mom’s Pumpkin Bread
This recipe yields at least three loaves of bread, depending on the size of your loaf pans. (We use 8 x 4 loaf pans approx. ½ filled)
You will need these things:
Mixing bowls (one large & one medium)
1 cup dry measure
1 cup wet measure
2/3 cup wet measure
1 tsp. & ½ & ¼ tsp. measure
1 lg can of pumpkin (about 15 oz.)
1 c vegetable oil (we use canola oil)
2/3 c water
3 ½ c all-purpose flour
3 c white sugar
1 ½ tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
½ tsp. ground clove
¼ tsp. ground ginger
Grease and then flour pans.
Preheat your oven to 350 degrees.
Step 1: In your large mixing bowl, mix together wet ingredients: the pumpkin, eggs, oil, water and the
Dry ingredient the white sugar. Blend this well. (Can use mixer but do not over blend) I mix this by hand
Step 2: Now, in a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, clove, and ginger.
Step 3: Then stir together the dry & wet ingredients and well blend.
Step 4: Now pour mixture into your prepared loaf pans.
Step5: Bake your bread for 50 minutes. (Check for doneness by inserting a toothpick into loaf center
If it comes out clean it is done.)
*Cut & remove from loaf pans when well cooled.
To enhance a slice of pumpkin bread, here’s a quick recipe for Honey Butter.
1 stick margarine or butter (about ½ cup) (soften to room temperature)
2 tbsp. brown sugar
1 tsp. of your favorite honey
Place softened butter in a mixing bowl, using a hand mixer beat this until fluffy, then
Add brown sugar. Mix again. And then finally add in the honey. Remix again.
Spoon into pretty ramekin for serving~ chill if not using shortly.
