2 medium zucchini
Parmesan cheese, grated
Cut the zucchini up into bite sized pieces. Put the pieces in a single layer on a dish that will be safe in the microwave. Now sprinkle the cheese over the top, as desired.
Microwave for about 3 minutes on high.
There are, of course, any number of ways to liven this up once you've got the basics down. You can add salt and pepper to taste. You can add in cumin and coriander to your zucchini for an Indian feel to it. How about some cayenne pepper to make it spicy? You could pour on some tomato sauce over the zucchini to give it an Italian flavor. Some salsa might give it that Mexican kick.
Be sure of course to get a sense of the base cooking process first. That way you know, for your microwave, how long to cook it for and how thick you like to slice it. Once you've practiced a few times, it's definitely open season on exploring all the different styles you can use with this dish.
Zucchinis originally hailed from Italy, but now they're grown in a wide variety of countries and in many back yard gardens. This is a green squash and is related to other squash and pumpkins. It's a great low carb source of nutrition. A medium zucchini has only 4g of net carbs, and about 2g of fiber.
