Big Game Day Dessert Recipe

Nobody wants to spend time in the kitchen during the big game, but itís also important that there are plenty of good dishes to snack on. So the cook must either make the food ahead, or make quick-to-put-together dishes that cook without supervision. Hereís a great dessert (nothing frou-frou for the armchair quarterbacks), that can be put together in about 15 minutes; it bakes while everyone is enjoying the appetizers, main dishes, and hopefully a winning team; Easy Country Pudding is served hot right out of the oven, and no matter how much other food there is to eat, there will be no leftovers.

Easy Country Pudding is an old-fashioned dessert- a real man-pleaser. And while itís not particularly fancy, believe me, itís really good!

8 Servings

Syrup:
2 cups boiling water
2 tablespoons butter
1 cup packed brown sugar
2 tablespoons lemon juice

Pudding :
1/2 cup granulated sugar
1/4 cup butter
1/2 cup milk
1/4 teaspoon salt
1 teaspoon vanilla extract

1 cup flour
1 teaspoon baking powder

1/2 cup raisins
1/2 cup chopped walnuts

  1. Preheat oven to 350į.

  2. Mix the syrup ingredients well, stirring until the butter is melted and the brown sugar is dissolved.

  3. Pour into a shallow 2-quart casserole dish.

  4. Cream the granulated sugar and butter until fluffy; stir in the milk, salt, and vanilla.

  5. Add the flour and baking powder; stir until well-combined.

  6. Fold in the raisins and nuts.

  7. Drop the batter evenly by tablespoonfuls onto the syrup.

  8. Bake 35-45 minutes or until the syrup is bubbly and the pudding is baked through.

  9. To serve, scoop pudding into bowls and top with the syrup and either sweetened whipped cream or ice cream.
