These salads are ultra fast to make and super tasty.
Ingredients
- 2 cups coarsely shredded cooked chicken
- 1/2 head cauliflower, cut into florets
- 1 Granny Smith apple, cored and cut into 1/4" cubes
- 1 Red Delicious apple, cored and cut into 1/4" cubes
- 1 shallot, thinly sliced
- 1/4 cup radicchio, julienned
- 1/2 cup parsley, chopped
- 3/4 cup ricotta cheese
- 2 Tbs extra-virgin olive oil
- 1 Tbs lemon juice
- 1/4 tsp salt
- 1/2 tsp freshly ground pepper
Directions
- Place the chicken, cauliflower, shallot, apples, and parsley in a large mixing bowl.
- Add the ricotta, olive oil, lemon juice, salt, and pepper to the bowl. Toss well and serve.

- 1 Red Delicious apple, cored and cut into 1/4" cubes
- 1/4 cup almonds, slivered
- 1/2 cup parsley, chopped
- 1/4 cup mayonaise
- 1 Tbs stone ground mustard
- 1/4 tsp salt
- 1/2 tsp freshly ground pepper
Directions
- Place the chicken, pears, apples, and parsley in a large mixing bowl.
- Add the mayonaise, mustard, almonds, salt, and pepper to the bowl. Toss well and serve.
