2 hot dogs
1/2 bag frozen cauliflower
1/4 cup shredded cheddar cheese
1 Tbsp mustard
1 tsp garlic powder
Put the cauliflower into a microwave safe bowl and add in 2 Tablespoons of water. Cover it lightly and microwave it for four minutes. While it's microwaving, cut the hot dogs up into about 1/2 inch lengths.
Pour the water out of the cauliflower and mix in the hot dog pieces. Sprinkle the cheddar cheese over the top. Drizzle on the mustard. Now sprinkle on the garlic powder, salt, and pepper.
Microwave for another minute and a half. At this point it's done in my microwave, but on yours you might need to do it for a bit more until it's all set.
I love this recipe - it's quick, uses common ingredients, and is delicious. You can mix up the spices and proportions based on the flavors you enjoy.
Cauliflower has only 2.8g of carbs for a whole cup, the cheese is about 0.4g of carbs, and you can find zero carb hot dogs. So the overall carb count here is quite low for an entire meal.
It's worth talking about hot dogs here. Hot dogs can have ALL sorts of chemicals and fillers in them. I highly recommend, if you eat hot dogs, to go for the natural, uncured variety, with no antibiotics, nitrates, or nitrites. Yes, they don't last months in your fridge - but they're better for you. I happen to get the Applegate brand but I'm sure there are many options out there for you.
Other serving ideas:
* Add fresh dill pickles on the side
* Use cajun seasoning to kick it up a notch.
* Go with Indian seasoning for an aloo gobi flair.
This is a perfect substitute for those having cravings for hot docs with macaroni and cheese. It's the same creamy, cheesy type of sensation.
