A certain southern-born husband, who considers himself an authority on southern-style coleslaw, and who is nicknamed Mr. Picky, had no idea that this was a light salad, and consumed several servings. 1 14 - 16 ounce package coleslaw mix, preferably with carrots and red cabbage for color
1/2 to 1 cup baby kale, finely diced (regular kale is also okay as long as it is very finely chopped)
1/4 cup light mayonnaise
1/4 cup nonfat yogurt
1/3 cup sugar
1/3 cup skim milk
2 tablespoons red wine vinegar
1 teaspoon Sriracha Hot Chili Sauce
1/2 teaspoon dry mustard
1/2 teaspoon salt
1 teaspoon dehydrated onion flakes
- Mix the coleslaw mix and kale in a large serving bowl.
- Pour the dressing over and toss.
- Refrigerate an hour before serving if you have time, but it can be served immediately if necessary.
- Dressing: Mix the dressing ingredients in the blender or MagicBullet until smooth (or whisk ingredients together in a bowl).
