Hands-on time is very minimal with these sandwich rolls; it takes only about 5 minutes to put the ingredients into the automatic bread machine; when the dough cycle is finished (most dough cycles take about an hour and a half), the dough is rolled or patted out, cut into strips with a pizza cutter, and tied into knots. Now how easy is that? Of course you can be doing anything you want while the dough cycle is running because this time-saving appliance takes care of the dough with no monitoring. It will call you when it’s ready.
16 Giant Rolls
1 1/2 cups water
1 1/2 teaspoons salt
2 tablespoons sugar
1 egg
3 tablespoons butter
1/4 cup powdered milk
1 4 oz. can mild green chiles
1 cup cornmeal
3-4 cups flour
1 cup shredded cheddar jack cheese
1 tablespoon yeast
Topping
1 egg
1 tablespoon milk
1 cup shredded cheddar jack cheese
- Place all ingredients (except topping ingredients) in the pan of an automatic bread machine.
- Turn the machine to the dough cycle and start.
- After 10 minutes, check to make sure the dough has formed a ball; if it's too soft, add more flour. If it's too stiff, add a little more water and start the cycle over.
- When the cycle is finished, transfer the dough to a lightly floured surface.
- Roll or pat into a rectangle about 12 x 12.
- Using a pizza cutter, cut into 8 strips vertically, then cut in half horizontally.
- Stretch each into a rope and tie into a knot.
- Place on parchment-lined baking sheets; cover and let rise until doubled in bulk.
- Heat the oven to 350°.
- Mix the egg and milk; brush each of the rolls with the mixture and sprinkle with a tablespoon of the cheese.
- Bake 15-20 minutes or until golden.
