Mexican Sandwich Rolls Recipe

Want something new to make in your automatic bread machine? How about Mexican Sandwich Rolls. They are good on their own, hot from the oven with a Mexican salad, but they are fabulous when used as buns for grilled chicken breasts sprinkled with Mexican seasoning or Chroizo & Chile Stuffed Burgers. They’re great for the lunchbox, too; pile them with deli meats and cheeses. With these homemade rolls, sandwiches will never be blah again.

Hands-on time is very minimal with these sandwich rolls; it takes only about 5 minutes to put the ingredients into the automatic bread machine; when the dough cycle is finished (most dough cycles take about an hour and a half), the dough is rolled or patted out, cut into strips with a pizza cutter, and tied into knots. Now how easy is that? Of course you can be doing anything you want while the dough cycle is running because this time-saving appliance takes care of the dough with no monitoring. It will call you when it’s ready.

16 Giant Rolls

1 1/2 cups water
1 1/2 teaspoons salt
2 tablespoons sugar
1 egg
3 tablespoons butter
1/4 cup powdered milk
1 4 oz. can mild green chiles
1 cup cornmeal
3 cups flour
1 cup shredded cheddar jack cheese
1 tablespoon yeast

Topping
1 egg
1 tablespoon milk
1 cup shredded cheddar jack cheese
  1. Place all ingredients (except topping ingredients) in the pan of an automatic bread machine.
  2. Turn the machine to the dough cycle and start.
  3. After 10 minutes, check to make sure the dough has formed a ball; if it's too soft, add more flour. If it's too stiff, add a little more water and start the cycle over.
  4. When the cycle is finished, transfer the dough to a lightly floured surface.
  5. Roll or pat into a rectangle about 12 x 12.
  6. Using a pizza cutter, cut into 8 strips vertically, then cut in half horizontally.
  7. Stretch each into a rope and tie into a knot.
  8. Place on parchment-lined baking sheets; cover and let rise until doubled in bulk.
  9. Heat the oven to 350°.
  10. Mix the egg and milk; brush each of the rolls with the mixture and sprinkle with a tablespoon of the cheese.
  11. Bake 15-20 minutes or until golden.
