Easy No-Bake Kris Kringles Recipe

It’s always nice to have a good no-bake cookie to add to Christmas cookie trays and to serve on holiday buffets. These Kris Kringles are easy to make, and can be made ahead. They contain chocolate, dry roasted peanuts, and coconut, so what’s not to like? Since they are formed into logs and kept in the refrigerator, they can be ready at a moment’s notice to serve unexpected guests.

The original recipe for Kris Kringles came from a women’s magazine article published in the 70’s, and has been tweaked slightly over the years. You may notice that these cookies contain raw eggs. During the 70’s, raw eggs weren’t an issue; if you’re worried, you can substitute Egg Beaters® or similar, but over decades of including these on Christmas buffets and cookie trays, there has never been a problem. As long as you use fresh eggs, you can be pretty certain that there won’t be a problem for you or the lucky recipients of your Kris Kringles either.

5 dozen No-Bake Cookies

2 cups semisweet chocolate chips
1/4 cup butter
2 eggs
2 cups sifted powdered sugar
1/8 teaspoon salt
1 teaspoon vanilla
1 cup flaked coconut
1 cup chopped dry roasted peanuts
  1. Melt the chocolate chips and butter in the microwave; stir until smooth.
  2. Stir in the eggs, sifted powdered sugar, salt, and vanilla; mix well.
  3. Stir in coconut and nuts.
  4. Form the mixture into two 10" logs.
  5. Wrap and chill until firm.
  6. To serve, slice 1/4 inch thick.
