It's an easy meal. You grab a quick sandwich and run. However, sometimes you want more from that sandwich. Grilling always gives a sandwich that special touch. When you add a tasty dipping sauce, your sandwich can be elevated from special to blissful!
Use good ingredients for your sandwiches. I like DiLusso meats and Kerrygold cheeses. For a less expensive sandwich, Aldi carries the Lunch Mate brand of roast beef in a tub and their Happy Farms cheeses. These are perfectly acceptable, and they are about half the price of traditional deli meats and cheeses. These sauces are especially delicious on a grilled roast beef with cheese.
Here are directions for grilling the sandwiches:
I used two slices of San Francisco Sourdough. Whatever bread that you use should be one that will grill to a hard crunchiness. I sprayed one side of each slice of bread with olive oil. In a large cast iron skillet, I placed the slices of bread, oiled side down. I covered one slice of bread with cheese. For the Horseradish Dill Sauce, I used Muenster. The Olive Sauce worked well with Swiss. Use your favorite cheese! I covered the pan with a lid and grilled the bread until it was golden and the cheese was melted. After the lid was removed, I placed the beef on top of the plain piece of bread and closed the sandwich by pressing the cheesy bread on top of the roast beef. Use the amount of roast beef that you enjoy.
If you like hot roast beef, feel free to grill the beef with the other piece of bread. Sometimes, the roast beef makes the bread soggy in the grilling process. I prefer cooler roast beef on my grilled sandwiches. Slice the sandwich diagonally. Spoon some of the dipping sauce on a plate. Serve the sandwich with the dipping sauce and your choice of sides.
Savory Dipping Sauce Recipes for Roast Beef
Horseradish Dill Sauce Recipe
1 tablespoon dill pickle juice (I used Claussen.)
2 tablespoons mayonnaise
1 tablespoon horseradish (I used Brede grated horseradish.)
1 teaspoon Grey Poupon Creamy Dijon
1/8 teaspoon dried dill rubbed between your fingers. (I used Lighthouse brand.)
1/8 teaspoon Garlic powder
1/8 teaspoon Worcestershire sauce
Onion powder (to taste) I used several small dashes.
In a small bowl, stir all of the ingredients together. Refrigerate the dipping sauce in a covered dish until you are ready to use it.
Olive Sauce Recipe
1 tablespoon mayonnaise
1 tablespoon Ranch dressing
1 tablespoon catsup
¼ cup Muffeletta salad (I use That Pickle Guy brand.)
1/8 teaspoon paprika (optional)
In a small bowl, combine the ingredients. Refrigerate the Olive Sauce in a covered dish until you are ready to use it.
