Slow Cooker Burrito Bake Recipe

The slow cooker is a busy person’s friend, especially on work days, and this Busy Day Burrito Bake is very quick to put together. No monitoring is necessary, of course, and the results are really good. Convenience foods take the stage here, and even though they aren’t as healthy as homemade, it’s sometimes necessary to use them to save time. Layers of frozen burritos (your favorite kind – bean and cheese, beef and bean, chicken and cheese, etc.), along with broken tostada shells (I save them since there are always a few broken ones in each package), frozen ground beef mixture from the easy and versatile Ground Beef Module, ready grated cheese, and bottled salsa make a casserole that isn’t particularly fancy, but is good enough to become a family favorite.

If you don’t have the Ground Beef Module in the freezer, simply brown a pound of ground beef with some fresh chopped onions, adding salt, pepper, and garlic to taste. This method takes a little longer, but will work in a pinch is one isn't in a big hurry. This casserole is almost a complete meal. Just serve it with plenty of shredded lettuce and more salsa.

8 Large Servings

8 frozen burritos, (1 32-ounce package)

2 cups ground beef mixture from the Ground Beef Module
8 broken tostada shells (more or less – they just add texture)
2 cups medium salsa
2 cups shredded cheddar jack cheese
  1. Place 4 burritos in the bottom of a 3-4 quart slow cooker.
  2. Sprinkle half of the ground beef mixture over, the top with half of the tostada shells.
  3. Cover with half of the salsa and half of the cheese.
  4. Repeat, ending up with cheese on top.
  5. Cover the crock, set to low, and let cook 5-7 hours (or high 3-4 hours).
  6. Serve with shredded lettuce and additional salsa.
