In Ghana this fish with red pepper sauce is served with porridge. It is very good over rice.
1 pound sauteed fish (any kind*) cut into medium sized pieces. Drain any fat.
4 thickly sliced medium tomatoes
2 thickly sliced medium sized white onions
2 tblspns. chile peppers, seeds removed and chopped.
Salt to taste
1. In blender - onions, chile peppers, tomatoes blend until chunky.
2. Pour over fish and heat thoroughly over low heat. Add salt to taste.
3. Serve over cooked white rice. Serve with a strong greens dish such at spinach, collards or steamed dandelion greens.
*Salmon is delicious in this sauce
