Today I wrote in the Sandwich Name Game, " Hummus slathered on a tortilla that has been grilled in olive oil with veggies." Then, it hit me! After my trip to the Farmers' Market, I have everything that I need to make this sandwich. The veggies are deliciously fresh. My hummus is a garlicky delight. Grilled in a tortilla, I couldn't ask for more. Here's how to make a Hummus and Veggie Grilled Tortilla for you to enjoy.
¼-1/3 cup tahini (I used 1/3 cup, but I love those ground sesame seeds.)
¼-1/3 cup of freshly squeezed lemon juice (This is the juice of a large lemon.)
1-3 minced garlic cloves (I used two.)
1 tablespoon extra virgin olive oil (I used the Kirkland brand.)
2 cans of garbanzo beans (These are 15 ounce cans. They are also called chickpeas. Reserve the liquid.)
1/8 teaspoon ground pepper
¼ teaspoon of sea salt
¼ teaspoon of paprika
¼ teaspoon of cumin
1 ½ teaspoons of dried parsley.
4 drops of Sriracha sauce (optional) (You could also use hot sauce or 1/8 teaspoon cayenne.)
2 drops of balsamic vinegar (optional)
In your food processor, add the tahini, lemon juice, garlic, and olive oil. Blend until smooth. Add the garbanzo beans, pepper, salt, paprika, cumin, parsley, Sriracha, and balsamic vinegar. Process the ingredients until it is your desired consistency. Add a little reserved liquid, if it is too thick. Homemade hummus does not have to be perfectly smooth. I like a little texture in mine.
Hummus and Veggie Grilled Tortilla Directions
In a large heavy skillet, add about 2 tablespoons of olive oil, more or less. Take a large flour tortilla and coat the bottom side with the oil by rubbing it around the pan. Cover half of the top (ungreased) side of the tortilla with your favorite medley of thinly sliced vegetables. Suggestions are summer squash, zucchini, onions, cucumbers, peppers, shredded lettuce or spinach, and seeded tomatoes. Turn the open half of the tortilla on top of the vegetables, making a half circle.
Grill the tortilla using medium heat. I covered the pan while I was grilling the first side. You don't have to, but I like my veggies a bit soft. Use a spatula to turn the tortilla when it is golden brown. Be sure to turn toward the fold to avoid losing the veggies. Brown the second side. Carefully remove your sandwich to a large plate. Open it up and spread hummus on the side with no veggies. Close the sandwich. It may be cut into wedges using a pizza cutter. This sandwich is fantastic with a chopped salad or marinated veggie salad. If you are in a hurry, try a green bean salad. Any of these would pair with the Hummus and Veggie Grilled Tortilla Recipe. Add some fruit, and your meal is complete. If the hummus is already made, it's a meal in minutes. Full of vitamins, minerals, fiber, and beneficial oils, this meal is as good for you as it is tasty.
