Recipe I
Ingredients
- 2 boneless pork-loin chops
- 2 Tbs red wine vinegar
- 2 Tbs olive oil
- 2 garlic cloves, minced
- 1 Tbs parsley
- 1 6 ounce can of tomato paste
Directions
- Mix the tomato paste, olive oil, vinegar, parsley, and garlic in a microwave pan.
- Put the pork chops into the sauce and turn so that they are coated well.
- Cover and microwave for 4-5 minutes on full power.
- Turn the chops over and microwave for another 4-5 minutes on full power.
- Set aside for 3 minutes. The chops will continue to cook in their own heat.
- Serve with the sauce.

- 2 Tbs olive oil
- 2 garlic cloves, minced
- 1 Tbs fresh sage (or 1 tsp dried)
- 1 6 ounce can of diced tomatoes
Directions
- Mix the diced tomatoes, olive oil, orange juice, sage, and garlic in a microwave pan.
- Put the pork chops into the sauce and turn so that they are coated well.
- Cover and microwave for 4-5 minutes on full power.
- Turn the chops over and microwave for another 4-5 minutes on full power.
- Set aside for 3 minutes. The chops will continue to cook in their own heat.
- Serve with the sauce.
