There ARE many quite delicious low carb tortillas on the market nowadays - Subway uses them for example. So check with the restaurant to see if they have low carb tortillas. If they do, it's super easy - anything with beef, chicken, cheese, lettuce, tomatoes and sour cream is perfect!
The big things to avoid here are of course the beans and the flour / corn tortillas. It's funny, but beans are a 'cheap filler' that they put in American Mexican food to make it cheaply. If you go to Mexico, a lot of the dishes are done with fresh seafood and fresh poultry and are perfectly low carb. So blame the American restaurants if your dish is filled with beans.
Instead, order dishes that are straight meat, like beef dishes or chicken dishes. Ask them to take the nachos away if they put them on the table. You don't need the salt, never mind the carbs! We enjoy the delicious taco salads that many Mexican restaurants have, with flavored beef on top of a delicious salad, with cheese and sour cream.
Fajitas are great in the sense that they come to you unassembled and you can just eat the delicious innards without bothering to wrap it in the provided pancake. Burritos can actually be handled in the same manner - slice down the middle, open it up and treat the wrap as a 'packaging' that you now eat your meal from within.
