Sour Cream Enchiladas Recipe

This is a perfect to make for your Cinco de Mayo celebration, but we like to have it throughout the year. It’s just one of my favorite enchilada recipes, and it fills up a group of teen-age boys – so it’s a winner at my house!

Sour Cream Enchiladas
meat and cheese and sour cream – yummy!

Ingredients:

2 pounds ground beef – I like to use lean, but you can use what you choose, but be sure to drain well after browning)
1 onion, diced
1 green pepper, diced
1 teaspoon salt
Pepper to taste
2 tablespoons picante sauce
1 tablespoon chili powder
4 drops hot sauce
½ cup chopped ripe olives
½ cup margarine, melted
¼ c flour
1 ½ cups milk
2 cups sour cream
18 corn tortillas
2 cups Longhorn cheese

Method:

Brown the ground been in a skillet. Sauté the onions and green peppers until soft: drain. Stir in salt, pepper, picante sauce, seasonings, and olives; simmer five minutes and set aside.
Combine butter and flour in a saucepan; slowly add milk, stirring constantly. Cook and stir until the sauce has thickened. Blend in the sour cream; heat for one minute but do not let it boil.
Fill each tortilla with meat mixture; roll and place them in a greased 9x13x2-inch casserole dish. Cover with the cream sauce; sprinkle with cheese.
Bake at 375 degrees for approximately 25 minutes. The cheese will be bubbly on top.

Yield: 6, 12 or 18 servings – depending on the ages and appetites of the diners!

It’s always good to serve a tossed salad with the enchiladas, and we like to have homemade lemonade and corn on the cob to round out the meal.

Cheese Dip
you can make this dip anytime your kids are going to be hungry – I like to make it in the crock-pot so it’s not super-fast but super easy – mix and forget

Ingredients:

2 pounds Velveeta Cheese cubed
2 pkgs. cream cheese cubed
2 cans Ro-Tel tomatoes with chilies
1 pound chub of sausage if desired

Method:

Brown the sausage and drain: add to the crock-pot with the cheeses. When the cheeses have melted stir in the Ro-Tel tomatoes. Serve hot with corn chips or Fritos.

Yield: A good snack to be enjoyed by few or many.

I like to have good food cooking to help keep my family close – when the house smells like good food they want to bring their friends over – which works out well… because then I know where they are and what they are doing.

Crock-Pot 2 Qt Slow Cooker - Red as it's just the right size. Both are available on Amazon.
