Spiced carrots are often served with Mediterranean dishes and are delicious. This easy recipe is less complicated and is almost as good.
1 large can (15 oz.) baby carrots
1 tblspn unsweetened butter
1 cup orange juice
3 tspn brown sugar
Directions
1. Slice each carrot on an angle or leave whole.
2. In saute pan add orange juice, brown sugar and butter. Simmer until butter melts. Add carrots and stir. Cook over medium high heat for 5 minutes until the juice thickens slightly. Let sit for 10 minutes to marry flavors. Serve warm.
Serve with couscous*, spinach and lamb chops.
Hint
*Couscous a staple in North African countries is semolina pasta, ground coarsely. You can now buy boxed couscous in supermarkets. It is usually found in the rice and pasta section.
