Grilled Pepper Jack Cheese Sandwich Recipe

These little grilled cheese sandwiches are usually made with Mozzarella cheese. In restaurants they are called Mozzarella in Carrozza. However, when made with Pepper Jack cheese they become delicious hot 'n spicy cheese pockets.

Try these and they may become a favorite appetize. Unfortunately you don't often see it on menus in 'upscale' Italian restaurants. These are simply battered pan toasted cheese sandwiches and they are delicious. This recipe is a twist is on an old favorite. Make these little sandwiches with pepper jack cheese instead of mozzarella. Pepper Jack is often packaged as a block of cheese, 6 in. x 2 in or more inches across. This is perfect for slicing and assembling between firm white bread.

INGREDIENTS

2 blocks of pepper jack cheese
8 slices firm white bread (trim crusts and save for bread crumbs)
1-1/2 cups of 1% milk
2 eggs, beaten
1 pinch of salt
2 tbspn butter
1/2 cup olive oil
Flour for dredging sandwiches

DIRECTIONS

1. Slice cheese lengthwise into 1/2 inch slices. Dip all slices of bread into mixture of milk and eggs that have been beaten together, remove quickly to prevent soggy bread. Place cheese onto 4 slices of bread. Cheese should cover whole slice of bread. Cover to make 4 sandwiches. Gently press sandwiches between your palms. Cut each sandwich in 1/2 (lengthwise, same as cheese)

2. Lightly flour the 8 rectangular sandwiches. Heat olive oil and butter in saute pan to very hot. Careful not let burn.

3. Fry sandwiches until golden brown on both sides. Remove from pan and drain on paper towels.

Wait a few minutes before biting into these tasty little cheese sandwiches, they are *extremely* hot when they are first removed from the hot oil.

Hint

*Good with Pasta Fagioli or tomato soup.
*If you make this with mozzarella cheese, you can make it more savory by placing sardines or small pieces of anchovy fillets between the sandwiches.
