The Chocolate Bliss Cake Mix from Sweets4U2 is made without aspartame, without Splenda, without refined white flour and without trans fats - and somehow it still ends up delicious and wonderfully textured!
The key is that the mix is made with almond flour and low glycemic ingredients. You store this mix in the fridge, keeping its fresh ingredients fresh until they are used. You then add in eggs, oil, sour cream, hot coffee and vanilla.
I have to admit the only "problem" for me with this mix was the ingredient list. Yes, we have eggs and oil in the house all the time, but we don't drink coffee and there's rarely a full container of sour cream. It took some coordination to get all of the ingredients ready for use.
It was well worth it. The cake was really delicious. It was moist, rich, chocolaty and everything a cake should be.
The cake mix is intended to be eaten within a few months of purchase, but we let it go longer than that and even so there weren't any problems at all with the flavor. It comes in a thin pouch, so it doesn't take up much room in your fridge.
Nutrition wise, a good sized cake slice is only 6g of carbs. It has 3g of fiber, which is great for you. It does have 13g of sugar alcohols, so if you're sensitive to sugar alcohols you should be aware of that.
I like that the mix uses organic cocoa and organic soy. The fewer pesticides we use in the world, the better!
If there's any down side to this cake mix (for people who drink coffee, at least) it is that it's only mail order right now. You won't find this in your local supermarket. You need to plan a bit ahead for birthdays and other celebrations to account for shipping time and so on. Since it's an eat-fresh item, you can't store the cake mix on your shelf for months and months to have it around for a cake-eating activity.
Still, we really should be a society that eats fresh food and plans out healthy meals. Eating 8 year old cake powder which is full of preservatives isn't really good for us. So I definitely recommend keeping a mix in the fridge, thinking up a reason to celebrate with cake every few months, and enjoy sweets in a healthy manner!
