I have never been much for eating eggs for breakfast tending towards the sweeter variety of breakfast foods such as French Toast; or a bagel and banana; or oatmeal; or cereal with fruit. But it seemed after eating these foods; I would feel hungry within an hour or sometimes minutes.
Through my studies as a Nutrition Coach, I learned that eating eggs in the morning would help curb hunger and set the tone for eating healthy for the rest of the day. I decided to test this theory out. I have never been much into eating eggs because I do not like the look of them, especially the sunny side up variety. Too runny for me! I have in the past eaten and liked scrambled eggs (but again they can not be at all runny) and on occasion an omelet.
For the first few days, I was eating just plain scrambled eggs. I have to admit that I did notice a difference. My immediate hunger was eliminated altogether. When I would eat in the morning at say 8 a.m., I would notice that I really wouldn’t be hungry until after 1 p.m. I also noticed that I tended not to crave sweets as much.
I am still eating eggs but I have made some changes. Eating plain scrambled eggs every day was getting a little boring so I started experimenting with various things to add to the mixtures such as salmon, broccoli, asparagus, mushrooms, feta cheese, and salsa. I did not add all of these items to the scrambled eggs at once, but I supposed you could. After all, isn’t that what an omelet is? At the end of this article, I have included some of my favorites.
Another change I have made is to cut down on the amount of food that I was eating. Breakfast might have included: especially if I had scrambled eggs, 2 slices of bacon and a fruit smoothie. Since I like to eat six meals per day, I often was not hungry until well after 1 p.m. often missing my morning snack and late for lunch. Breakfast now consists of some sort of scrambled egg concoction and either a slice of turkey bacon or ¼ avocado and fresh fruit (1/2 of a banana or ½ cup of berries).
Here are some of my favorite scrambled egg recipes:
Basic Scrabbled Egg Recipe
1 tsp of olive oil or canola oil
salt and pepper to taste
To liven it up, try the following:
Scrambled Eggs, Mushrooms and Feta – Add diced mushrooms and to the egg mixture and a pinch of Herbs de Provence. Once the eggs are cooked, serve with a pinch of Feta cheese.
Mexican Style Scrabbled Eggs – Add diced jalapeno peppers (optional), a pinch of Mexican cheeses. Once plated, add a teaspoon of salsa
Scrambled Eggs with Asparagus – Add diced asparagus. This is great if you have leftovers from the night before.
Scrambled Eggs with Broccoli - Add chopped broccoli. Also a great way to use up leftovers.
Greek Scramble – Add chopped Kalamata olives (2-4), Greek seasoning (to taste). After plating, add a pinch of Feta cheese and a sprinkle of chopped green onions. Yummy! I think this one is my favorite.
Scrambled Eggs with Salmon – Add leftover salmon and Herbs de Provence to the mixture. Delicious!
Scrambled Eggs with Tomatoes, Onions and Basil – Sauté onions in oil until soft. Add eggs, salt and pepper. When eggs are almost done, add chopped tomatoes to heat through. Garnish with basil.
You may want to try the some of the above mixtures in an omelet as well. Enjoy!
