A friend of mine loves Thai food, together we came up the our own version of Khai Yad Sai (stuffed omelette). Our version is more of a shirred egg omelette or frittata. Very good.
Ingredients
3 eggs
1 medium tomato or 3 small plum tomatoes
2 oz sweet peas (petite peas)
1/2 sweet green or red pepper*
1 chili pepper, finely sliced with seeds removed*
1 medium onion
1 tbspn freshly chopped coriander* (also called Cilantro) or parsley
1/2 tspn fish sauce
1/2 tspn sugar
1 tspn soy sauce (light)
oil for cooking
Salt and pepper to taste
Directions
1. Chop onions, tomatoes, sweet pepper and mix. Heat oil in medium sized frying pan and add vegetable mixture. Add sweet peas and remaining seasonings, fish sauce, soy sauce and sugar then stirto blend. Cover pan and remove from heat.
2. Break eggs into separate bowl and beat until golden and fluffy. Add coriander* and beat eggs again.
3. Place pan with vegetables back on heat and add eggs to mixture and stir gently to mix but not to scramble. Cover for 3 or 4 minutes until eggs are done. Makes 2 servings.
Hint
*Red pepper is a little sweeter
*Reminder to always wear rubber gloves when handling any hot pepper.
*If you do not like the taste of coriander/cilantro, use parsley.
