Ham and Asparagus Quiche Recipe

Ham and Asparagus Quiche

This is good recipe for using your ham leftovers with fresh spring asparagus.

  • 1 cup cooked diced ham
  • 1 lb. fresh asparagus, trimmed to 4" pieces or 1 pkg. (10 oz.) frozen asparagus spears
  • 1 cup shredded Swiss cheese
  • 3 eggs
  • 1 cup light cream or half & half
  • 1/4 tsp. salt
  • dash of pepper
  • 1/2 tsp. dried parsley

Preparation -
Spray a 9" quiche dish or heavy ceramic pie pan with non-stick cooking spray. Place the ham cubes in the bottom of the dish. Arrange the asparagus spears on top. Sprinkle the shredded Swiss cheese over the asparagus. Beat the eggs, cream, salt and pepper together until well blended. Pour the mixture over the other ingredients. Sprinkle parsley over top. Bake in a preheated oven at 375º for 30 to 40 minutes or until set.
