Here is an unusual way to serve canned tuna. Savory tuna patties are excellent for a light but filling lunch when served with a simple salad of tomato, cucumber and lettuce.
Ingredients
2 (6 1/2 oz.) cans light tuna in water (drain one can)
1 cup flour
1/2 cup onions, chopped
1/2 to 1 tspn hot pepper flakes*
1 tspn baking powder
2 eggs
Vegetable oil
Salt and pepper to taste
Add baking powder to flour and sift together, add salt and pepper if desired. Add water from one can of tuna and eggs together and beat thoroughly. Stir in tuna and pepper flakes, mix gently. Be careful not to break tuna further. Make small patties and fry in hot oil until brown on both sides. Drain on paper towels. Serve with the butter and caper sauce below or serve with a squeeze of lemon juice and a sprinkle of chopped fresh parsley. Serve a simple and salad or melon slices*.
Butter and Caper Sauce*
6 tablespoons butter
2 tablespoons capers
1/2 cup onion, chopped
1 clove garlic, minced
Hint
*I like to use 1 teaspoon of pepper flakes.
*Sprinkle melon slices with a little salt to bring out the flavor.
*Butter and caper sauce is lovely over fettucini.
