Miniature Ham and Cheese Sandwiches

These bite-sized wonders are great for a cocktail party, tea party or before a light meal. They are also perfect for a child's party.

4 tablespoons, unsalted butter
24 very thin slices of white sandwich bread, crusts removed
1/2 cup plus 2 tablespoons Dijon mustard
8 ounces thinly sliced Tavern ham
8 ounces thinly sliced Gruyère cheese

1. Spread butter over one side of each slice of bread.
2. Lay the buttered side down and spread the other side generously with the mustard.
3. Slice the bread in half diagonally.
4. Assemble each half-sandwich, butter side facing out, with 2 slices of ham and 2 slices of cheese.
5. Working in batches, cook 5 to 6 sandwich halves in a medium skillet over medium heat.
6. Cook until the cheese is melted and the sandwiches are a golden brown, 1-1/2 minutes per side.
7. Serve hot.
