Almost Key Lime Pie

Whether you are Irish or just want to celebrate with the Irish here are a couple of recipes for green food. My family likes to eat green food on St. Patrick's Day and red food on Valentines day, so I am always on the lookout for tasty and interesting foods. I know you will like these recipes.

First, here is a quick and easy recipe for a great pie for St. Patrick’s Day. Use green food coloring, to get the right shade of green. With the mixture of lime and sweetened condensed milk, this cream pie is reminiscent of key lime pie.

With only four ingredients in the filling and no baking, it doesn’t take long to whip up.

1 (14 ounce) can sweetened condensed milk
1 (8 ounce) can frozen limeade concentrate
1 (8 ounce) container frozen whipped topping
3 to 4 drops green food coloring, or more as desired

1 prepared graham cracker crust or baked pie shell
Lime slices (for optional garnish)

Thoroughly blend together the sweetened condensed milk and the frozen limeade concentrate.

Fold in the whipped topping, adding green food coloring a few drops at a time until desired hue is attained.

Pour the filling into the prepared graham cracker pie shell.

Garnish pie with dollops of whipped topping and lime slices, if desired.

Freeze for about 2 hours prior to serving. Slice to serve.

Green Bread

This is also really fun to make at Christmas time with maraschino cherries chopped up in it - looks very festive with the red and green!

You can also make it for St. Patrick's Day without adding the cherries. It tastes really good. At first people are afraid to try it because it is green, but once they taste it they want more...

1 pkg. yellow cake mix
4 eggs
1/4 c oil
2 T water
1 pkg pistachio putting [3 oz]
1 c. sour cream
1/2 c maraschino cherries, chopped (leave out the cherries if making for St. Patrick's Day)

1/2 tsp green food color

1/2 tsp cinnamon & 2T sugar for topping

grease and flour 2- 9x5 loaf pans
over at 350 degrees

Mix in this order:
cake mix, eggs, oil, water, pudding, sour cream, cherries and food coloring
Put: cinnamon and sugar topping on top

Bake 45 minutes
