Spicy Onion Relish Recipe

Did you pig out on hot dogs the Labor Day weekend but still have a lot of uncooked doggies left over? What can you do? You can freeze the hot dogs and have them next week. Meanwhile make this spicy boardwalk onion relish and have it ready for next week's hot dog lunch or dinner.

This recipe is quick, easy and excellent over hot hot dogs and sweet Italian sausage on a bun.

INGREDIENTS

2 medium sized Vidalia onions, chopped
1 tblspn sweet paprika
2 oz. apple cider vinegar

DIRECTIONS

Mix all ingredients and allow the flavors to marry. The uncooked onions will turn the same color as the paprika. The apple cider vinegar adds the right bit of sweetness to the onions.

*Add a little of this spicy onion mixture to pork and beans to make them extra delicous. You can find a number of ways to use this spicy onion relish
