Microwave Berry Cobbler

Microwave Berry Cobbler

  • 1/4 cup margarine, softened
  • 1/2 cup sugar
  • 1 cup flour
  • 2 tsp. baking powder
  • 1/8 tsp. salt
  • 1/3 cup milk
  • 1-1/2 cups fresh berries (use strawberries -hulled, blueberries, raspberries or blackberries)
  • 1/2 cup sugar
  • 1/2 tsp. cinnamon
  • 1/2 cup orange juice

Preparation -
Spray a square or round microwave-safe baking dish with non-stick cooking spray; set aside. Mix the margarine and sugar together in a bowl. Add the flour, baking powder and salt and mix well. Add the milk and mix well. Pour the mixture into a square or round microwave-safe baking dish. Place the berries in a microwave safe bowl. Stir in the sugar and cinnamon. Cook on full power for 2 to 3 minutes or until the berries are soft. Stir in the orange juice and cook for about 20 seconds. Spoon the fruit mixture over the other ingredients in the baking dish. Bake at 70% power for 10 to 15 minutes. While baking, the fruit mixture will settle in the bottom of the dish and a cake-like layer will bake on the top. Serve warm, topped with whipped cream of a scoop of ice cream.
