Tomatoes are a fruit not a vegetable which is probably why I love them so much. This simple yet tasty salad is a great way to use your bountiful tomato harvest.

The Roasted Vegetable
From Chicken Breasts Baked with Wild Mushrooms to Spicy Country-Fried Chicken Breasts and chicken enchiladas, the easy-to-follow recipes in this book add flair to the tastiest part of the bird.

Ingredients

7-8 medium-sized tomatoes (a mixture of yellow and red)
1 bunch of fresh basil
2 tablespoons olive oil
1 tablespoon red wine vinegar
Salt and pepper to taste

Instructions

1. Cut tomatoes into slices about 1/2-inch thick.
2. Alternate red and yellow tomato slices on a large platter.
3. Place a basil leaf between each slice.
4. Drizzle with olive oil and vinegar.
5. Sprinkle with salt and pepper and serve.

Serves 8
