First, you start with the chips. The chips are going to be, by far, the highest carb part of this dish. Track down a reliable source of super low carb chips that you enjoy and then buy in bulk! We've tested many chips out over the years and unfortunately a lot of the great ones go out of business for some reason. We really enjoy RW Garcia Soy Flaxseed Tortilla Chips. This is an honest endorsement - we have tried quite a number of chips out. These guys have survived the years, are healthy, and we can buy them in bulk on the internet. They have only 9g of carbs per serving, plus 4g of fiber.
Of course, any chip you find that you like that's low carb is perfect! This is just the solution we have found.
Next, the cheese. Really, any cheese in your supermarket will do. All cheese pretty much is zero carb. We go with a multi-cheese Mexican blend that's supermarket brand.
Here's the pre-microwaved version.
Next comes the salsa. We love the Newman brand because of their charity work and their flavor. The salsa is really low in carb too - only 2g for the average serving, if even.
Finally, the sour cream. It's 1.2g per 2 Tablespoons so it's all dependent on how much you glob onto your chips. I recommend dipping thoroughly but lightly so you get all the flavor without large globs.
Here's the microwaved chips -
You can decorate with cilantro or parsley if you want. We microwave them for 1 minute on high - be sure to use as splatter cover over your plate to keep the inside of your microwave clean!
Well recommended for any diet. The fiber is good for you, the calcium is good for you, and of course the salsa gives you good tomato nutrients!
