Ingredients:
Chopped and boiled vegetables:
1 cup potatoes
1 cup peas
1 cup cauliflower florets
1 cup bringal(aubergine)
1/2 finely cup chopped onions
1 tsp chopped ginger
1 tsp chopped garlic
1 tsp chopped green chillies (optional)
1/2 tsp turmeric powder
1/2 tsp garam masala powder
1/2 tsp chilli powder
1/2 tsp coriander powder
1/2 tsp cumin powder
1 tsp cumin seeeds
3 tbsp melted butter
salt to taste
Method:
Heat 1 tbsp butter in a heavy pan, add the cumin seeds. when it starts to crackle add chopped onions and fry till they turn into golden brown in color. add ginger garlic and green chillies and fry for 2 minutes. add remaining butter remaining masalas and salt, mix well. Add vegetables to this masala mix well cook for 3-4 minutes.
Serve hot with roti or chapaties.
