Preparation - Place beef in a pot, add water to cover and bring to a boil. Cover, and simmer for about one hour or until tender. Cool, then run the cooked beef through a meat grinder or a food processor to grind coarsely. Place the meat and the remaining ingredients in a large pot. Cook over medium heat almost to a boil, stirring constantly. Reduce heat to simmer, cover and cook for 1 hour, stirring occasionally. Remove from heat and let cool. Prepare pastry for a double crust for 9" pie. Place meat mixture in the pie shell. Scatter rum over mixture. Place the remaining crust on top and flute edges to seal to bottom crust. Make a few slits in the top crust to allow steam to escape while baking. Bake for 1 hour at 375°. Serve warm, garnished with whipped cream if desired.
