This is a simple take on a classic Italian chicken recipe.
Ingredients
- 4 large chicken breasts, boneless and skinless
- 1 cup flour
- 2 eggs, lightly beaten
- 1/2 cup Parmesan cheese, freshly grated
- 2 cups bread crumbs
- 1/2 cup olive oil
- 1/2 cup butter, unsalted
- 4 cups tomato sauce
- 1 pound mozzarella cheese, thinly sliced
Directions
- In a large skillet heat the butter and olive oil over medium-high heat.
- Dredge the chicken breasts in flour.
- Dip the breasts in the egg, coating all sides.
- Dip the chicken into the bread crumbs and coat all sides.
- Cook the chicken breasts until they are a deep golden brown on both sides.
- Put 1 cup of tomato sauce in the bottom of a baking dish large enough to hold the chicken pieces in one layer.
- Add the cooked chicken to the baking dish.
- Cover the chicken with the remaining tomato.
- Cover each chicken breast with 1/4 of the mozzarella cheese.
- Bake the chicken in the oven for ten minutes at 400F.
Note: If the cheese hasn't browned you can broil it for 1 minute.
This dish is perfect with spaghetti, a Caesar Salad, and garlic bread.
